Hearty breakfasts

I hate to admit it, but sometimes on the weekends, I miss big breakfasts of eggs and bacon. They still look good to me, but I know if I eat them, I certainly won't feel good. These days, I've been treating myself to my own versions of hearty breakfasts, ETL-style:


It's a big plate of scrambled tofu, tomatoes with basil, steamed broccoli and beans.

    We've been doing something similar at our house with scrambled (curried) tofu, mushrooms, swiss chard, and roasted purple potatoes.

  2. You did a great job capturing the colors of eggs and bacon too, I must say! I totally agree with you about missing big breakfasts, but my heaven was even worse than just eggs and bacon I'm afraid. I was a eggs, bacon, sausage, pancakes and hashbrowns kinda girl, topped off with a hot cocoa! Geez! It's a marvel I wasn't more overweight pre ETL than I was :) Great posts, I'm still just toying with my blog with no rhyme or reason but having fun, I love yours and will certainly use it for inspiration! Always nice to meet another dedicated ETLer in the foodie blog world.
